Ingredients for Grated yam rice
- Yam --- 200g
- Soup stock(Japanese dashi) --- 100g
- Soy source --- 2 tablespoon
- Seaweed --- as needed
The yam has thin roots like a beard, so please remove it carefully. This is an important process for producing a good texture.
1.Prepare yam
Wash the yam with water and dry the surface with kitchen paper.
2.Remove thin roots of yam
Place the yam over the flame to roast the surface and remove the thin roots.
3.Grated yam
Grate the yam as finely as possible to smooth the texture. If it possible, after grate yam then mush in a mortar.
4.Season the yam
Add the prepared soup stock and soy sauce to the grated yam.
If you are a vegetarian, we recommend you to prepare shiitake soup stock. For non-vegetarians, we recommend bonito soup stock.
Stir yam, soup stock and soy source well.
Sprinkle chopped seaweed over the top
